I Cooked...Can you believe it?

No secret here...I hate to cook! But for my family's own good, I've been trying to cook a little more. Yesterday I decided to cook one of my mom's recipes...I mean really, she's Cajun...who doesn't love Cajun food? Now, don't make this if you're looking for a low fat dinner..Cajun food is not low fat! ;)



Crawfish Pictures, Images and Photos



Crawfish Enchiladas


1/2 stick of butter
1/2 cup onions, chopped
1/2 cup bell pepper chopped
1 pound crawfish tails
1/2 cup half & half
1/2 cup Monterrey jack cheese shredded
1/2 cup Colby cheese shredded
1/4 block of Velveeta Mexican style cheese
Cajun Seasoning
10 flour tortillas


Heat oven to 350 degrees F.

In butter, saute onions and bell pepper until clear. Add crawfish, Velveeta, and half & half. Season to taste. On low, simmer for 15 minutes. Do not bring to boil.

Fill each tortilla with mixture; roll. Place seam side down in pan. When finished spoon remaining sauce over top and spread grated cheese on top. Bake for 10 minutes or until shredded cheese on top is melted.

Serve with green salad.


I only used 8 flour tortillas...because I kind of put too much mixture into the first few tortillas...this came out so delicious...and BOTH of my children ate theirs...and even asked for seconds. I was so shocked!! We love us some crawfish in our house and really can't wait to eat some hot and spicy boiled ones! Even though the whole family loved this recipe I probably won't make it too often because like I said before, it is by no means low in fat or sodium!! But it's ok to splurge sometimes, right?

My wonderful friend Tiffany had her beautiful baby boy on Monday and I'm just now getting around to posting about him! He is sooo adorable! I went to visit with them Tuesday afternoon and I so did not want to put that baby down. I'm what some would call a "baby hog." If there's a baby in the room, I must hold him/her...well if I know the parents, of course. I'm not like the weird lady in the doctor's waiting room who comes up to you and ask to hold your newborn, creepy. I'm not creepy, I assure you. I'm a germ freak and would trip if someone evvver did that to me, assuming I had a newborn of course....which I don't...and probably never will. Ok, anyway...here's a picture of him and all his cuteness and one of me and him and my no cuteness!

Square Root & Pi Day

I hate Math. There, I said it. I don't think there is anything that could get me to like it, ever. I failed Math last semester and no, I'm not proud of it...but I do blame it on Hurricane Ike and getting married in the middle of the semester! I would NEVER admit it to my husband but man, he was so right when I picked out our wedding date. He said "In the middle of your school semester?!" I replied "Sure, why not!? It's can't be THAT hard to plan a wedding while working 40 hours and going to school full time and having 2 children and a fiance at home!" Well, it wasn't THAT hard until Hurricane Ike hit just a few weeks prior to our big day and really threw things for a loop. Anyways, back to Math...I'm taking Fundamentals of Mathematics part 2...it is a simple Math, but none the less...Math...and I hate it. (I did pass my first Math test last week though! woo!)



Yesterday my Math professor told us to stop by the Math lab on 3/13/09 to celebrate Pi Day! OMG, are you serious?! They're having a "Pi Party"...ya know..since Pi is 3.14blahblahblahblah...and since 3/14/09 is a Saturday they are doing it a day early. I think I'll skip the Pi Party!

I logged onto Yahoo this morning and it says it's National Square Root day! C'mon people...are there really that many people that like Math that they feel the need to celebrate Pi Day and Square Root day?! I just don't get it....I hate Math.

Not Me Monday!



Time to hop on to the MckMama train boat and play along with her!

I most definitely have not been craving french fries since giving them up for Lent!! It's all in my head, I tell ya!

I will not be 26 this Saturday! Oh no, not me!! I'm staying 25 for the REST-OF-MY-LIFE.

I did not reward my children with milk shakes yesterday because they were so well behaved while we went shopping for several hours...and the lady making them most certainly did not give them a large inside of a small...and this mama did not help herself to some of the leftovers!

My husband did not give me money Saturday and tell me to go shopping and buy myself something since I never get to!! Awe, sweet! Then he did not buy me a brand new $300 cell phone for my birthday!

I did not go to several stores Sunday looking for the giant cupcake pan...and I did not find it...seriously, I didn't. =(

And it certainly is not me who got accepted in the National Scholar's Honor Society. *and YES, I did spell "society" wrong in the original post...why doesn't the "i before e except after c rule work here?!

The Dog

Our dog, Lucee, likes to chew.



We provide her with multiple chew bones and toys, yet she still likes to chew the girls Littlest Pet Shops, DS stylus', tissues from the trash, and rugs.

Just now, while I was doing homework reading blogs, our oldest daughter walks into the living room and says, "There's something all over the carpet" and runs off. The dog had gotten a tennis balls and ripped all the fuzzy stuff off of it and that was the "something all over the carpet." I knew it was there...I just haven't gotten off my lazy bottom to pick it up yet...simply because I don't want to. I love how children announce the obvious and then carelessly run off...leaving it for mama to clean up.

So, I'm off to pick up wet tennis ball fuzz from the carpet...maybe I have sensory issues, but the thought of it makes me want to twitch...then we're off to go shopping. The hubs hooked me up with some cash to buy myself a new outfit for my birthday dinner, thanks honey!!
